Corn and Spinach Crostini is an appetizer that is made with toasted or grilled bread loaf and topped with your choice of vegetables. Here in this recipe of Corn and Spinach Crostini, I have used boiled sweet corns and Spinach. Together they make a lovely combination and this crostini will disappear as soon as you serve them.
A long loaf of French bread is sliced to make small, thick toasts called crostini – cover them with the kids’ favorite toppings and bake.
Recipe of Corn and Spinach Crostini
Ingredients:
1 loaf French bread or Garlic bread loaf – cut into ½” thick slices
2 potatoes boiled, peeled and mashed
¾ tsp salt
½ tsp pepper
¼ tsp oregano,
2 tbsp oil
2 tbsp corn, canned or frozen
2 cups finely chopped spinach
GARLIC BUTTER:
3 tbsp softened butter
½ tsp minced garlic – crushed
a pinch of salt
¼ tsp freshly crushed pepper
TOPPINGS:
½ cup grated cheese preferably parmesan or mozzarella (optional)
2 tbsp olive oil or melted butter
Method:
1. Heat oil and add finely chopped Spinach, saute it few seconds and add mashed potatoes, corn, salt, pepper, and oregano. Cook for about 2 minutes and remove from the heat.
2. Prepare garlic butter by mixing softened butter with garlic, salt, and pepper.
3. Cut French loaf or garlic bread diagonally into ½” thick slices. On each slice spread some garlic butter.
4. Arrange the potato, corn, and spinach mixture on it. Cover with grated cheese(optional).
5. Spoon a little olive oil or melted butter on top of the cheese.
6. Bake in a preheated oven at 180ºC/350ºF for 10 minutes or till the base of the bread turns crispy and the cheese melts. Serve it hot.
