Veg Kabab

Veg Kabab or Vegetarian Kebab is a succulent and delicious snack recipe. It is made using different kinds of vegetables and mushing them into a fine texture. This step-by-step recipe of Veg Kabab is going to guide you to prepare this lip-smacking vegetarian version of kababs.

Considering the fact that the veg kebabs are made with a variety of veggies and very little oil, this is quite a healthy recipe. Mainly, you can sneak in as many vegetables of your choice and make it as wholesome and as nutritious as you desire.

History of Kabab | Kebab

Moreover, Kababs | Kebabs were originated by Mughals in Lucknow State and were mainly made with minced meat for the nawabs. However, with time, many Chefs invented the vegetarian version of kababs by using potatoes, vegetables, soya, paneer, rajma, etc.  Traditionally these kababs are made in a tandoor, but many have started making them at home using a grill pan or a non-stick tava (frying pan).

  • Make these kebabs on a grill pan for that authentic look.

Step-by-Step Recipe of  Veg Kabab | Veg Kebab

Ingredients:
This recipe will yield  8-10 kababs
6 Boiled and peeled potatoes
1/2 cup French beans
1 medium finely chopped onion
1/2 cup carrots
1 medium finely chopped capsicum
2 tsp minced garlic
1 tsp ginger chili paste
1/4 tsp turmeric powder
1/2 tsp red chili powder
3/4 tsp coriander powder
1/2 tsp garam masala
1 tsp pepper powder
Salt as per taste
1/4 cup cornflour
1/2 cup bread crumbs
Cooking Oil for frying

Method:

1. Firstly, boil the potatoes in a pressure pan till 2 whistles. Once the pan is cooled, open the whistle, let the potato cool down and then peel the potatoes.

3. Now drain them in a strainer and let them cool down.

5. In a small frying pan, heat oil and add chopped onion, capsicum, salt, and minced garlic. Saute them for 2 minutes till they are cooked nicely and keep them aside.

6.  Take a broad vessel and mash potatoes, add onion, capsicum, and all the spices in the stuffing.

7. Now add smashed carrots, beans, bread crumbs, and cornflour and mix everything well till all the spices and vegetables are nicely blended.

8. Keep the stuffing in a bowl and now you are ready to make the kababs. You can also keep the stuffing in the fridge if you want to make these kababs after some time.

9. Time to shape our kababs, for this we will need ice cream sticks or barbeque sticks. Start by greasing your palm with little oil so that the stuffing doesn’t stick to your hands.

10. Take an ice-cream stick and cover the kababs on the stick nicely, stuffing has to be perfect as shown in the figure. Roll all the kababs in cornflour and keep them ready.

11. Now take a grill pan, brush it with cooking oil, once it’s hot start placing the kababs, 4 at a time do not overcrowd your pan.

12. Apply little oil and cook the kababs on a medium flame from all the sides till they are brown in color.

13. Finally, repeat the same process with all the kababs and serve them hot with green mint or coriander chutney.
