There is no perfect or imperfect way to celebrate a festival. It is all in our goof faith and belief. Every religion has some different and unique ways of celebrating and remembering their almighty..god…allah..Jesus….Each one to its own!! But one thing that remains common is the food factor.
We all try to woo God by offering their favorite dishes….sweet or savory. Without this, a festival seems to be demotivated. It’s not that God has an appetite for food. It just signifies our feelings…devotion and gratification towards God….and so they say
FESTIVALS….. CELEBRATIONS and SWEET THINGS go together
just like dark chocolate and strawberries….coffee and biscotti…..wine and cheese!!
Let’s have a sweet beginning because we don’t really need a reason in the first place. In my books, the 2 most auspicious sweet dishes that are associated with any kind of festivals or celebrations are Kheer and Sheera. These 2 dishes are undoubtedly made at our place during any occasion…!!
Life is too short and once in a while, we need to savor our moments by spoiling ourselves with some delectable desserts.
Recipe of Fantasy Kheer Parfait
Ingredients:
1/4th cup rice (small-grained)
1 1/2 liter full-fat milk
1/2 cup fresh cream
2 cups of sugar
1/2 tsp elaichi /cardamom powder
For Fruits
2 cups pomegranates
1/2 cup diced chickoo
1/2 cup diced apples
1/2 cup diced pears
1/2 cup diced bananas
1/2 cup whipping cream
Method:
1. Wash the rice grains with water and soak it in water for 10 minutes.
2. Take a heavy bottom pan and pour milk in the pan.
3. Heat the pan and let the milk come to a single boil.
4. Now add the rice grains and stir it well.
5. Let the rice get cooked in the milk on a low flame.
6. Keep stirring in between so that the rice doesn’t stick to the bottom of the pan.
7. Rice will take approximately 35-40 minutes to cook.
8. Now add the sugar and cardamom powder and stir well and let it cook for again 10-12 minutes till the milk becomes creamy and thick.
9. Once the desired consistency has attained switch off the gas and remove the kheer in a glass bowl and let it cool at room temperature.
10. Dice the fruits into small cubes and mix all the fruits in a bowl.
11. Keep aside a handful of pomegranates to start with the first layer.
12. Chill all the fruits before using except banana, Beat the whipping cream till it is soft and attains its peak.
HOW TO START LAYERING PARFAIT
1. Take 2 long glasses and start with layering.
2. First, put some handful of pomegranates followed by 2 spoons of rice kheer.
3. Now add 1 spoon of whipped cream and top it with mixed fruits.
4. Finally, top it up with whipped cream and garnish with mint and edible flowers if you wish to.
