This Healthy and humble lauki kheer are just apt to satiate your sweet tooth craving. It is delicious and a perfect sweet dish during fasting!! It is easy and a quick dessert.
Recipe of Lauki Ki Kheer
Ingredients:
1 cup grated bottle gourd (doodhi / lauki)
2 cups low-fat milk
2 tbsp sugar
1 tbsp cardamom (elaichi) powder
1/2 cup Almond and Pistachio shavings for garnishing
Method:
1. Combine the milk and bottle gourd in a deep non-stick pan, mix well and cook on a medium flame for 10 to 15 minutes or till the bottle gourd is cooked while stirring occasionally and scraping the sides of the pan.
2. Add the sugar, mix well, and cook on a medium flame or another 1 to 2 minutes or till the sugar dissolves completely.
3. Add the cardamom powder and mix well.
4. Keep aside to cool completely and refrigerate for at least 1 hour.
5. Serve chilled with almond and pistachio shavings.
