Ingredients required to make this Lemon Cheesecake Tart
This Tart can easily be made at home using basic ingredients that are available in our pantry. Mainly what you will need to make this recipe is all-purpose flour, powdered or icing sugar, butter, homemade crumbled paneer, hung curd, lemon, fresh fruits like kiwi, pomegranates, or any other fresh seasonal fruits like strawberries, mangoes, peach, etc. Other then this you will also need is veg gelatin and baking powder.
Tips to make the Tart Base
This baked Tart Base comes out really nice, flaky, and just enough crunchy. The main tip here is to use fresh ingredients and knead the dough well will Ice cold water only. This is a very important tip to bake a perfectly flaky crust tart base.
Alternatively, you can also prepare a tart base with crumbled digestive biscuits and butter or Graham crackers or any other biscuits of your choice.

Recipe of Lemon Fruit Cheesecake Tart
Ingredients:
FOR TARTS-
2 cups all-purpose flour
1 cup Icing sugar
100 grams cold butter
1 tsp baking powder
1 cup Ice cold water
pinch of salt
FOR CREAM CHEESE-
2 cups Homemade paneer
2 cups Hung curd
1 cup Icing sugar
1 tsp Veg gelatin powder
1 tsp lemon juice
FRUITS
2 medium-sized kiwis
1 cup Black grapes
1 cup Pomegranates
Fresh mint leaves to garnish
FOR TARTS
1. Sieve all-purpose flour, salt, and baking powder in a bowl and keep it aside.
2. Make small chunks of butter and rub into the flour with your fingertips and mix well.
3. Gradually add ice-cold water and knead well to make a stiff but not too hard dough.
4. Cover the dough with plastic cling wrap and refrigerate it for 30 minutes.
5. Remove the dough and roll it as per the size of your tart tins.
6. Grease your tart tins with butter so that the tart shells come out easily.
7. Place the circle into the tart tin and press it gently around the sides of the tart tin.
8. Repeat this with all the tart tins.
9. Prick all over the tarts with the help of a fork.
10. Pre-heat the oven for 10 minutes at 180 C.
11. Arrange all the tart tins on a baking tray and bake it at 180 C for approximately 12-15 minutes till the shells are light brown in color.
12. Once baked remove the tart shells from the oven and let it cool.
FOR CREAM CHEESE-
1. Blend together home-made paneer, hung curd and icing sugar till it is soft and fluffy.
2. Soak the gelatin in water and microwave for 20 seconds.
Add lemon juice and gelatin to the above cream cheese mixture and mix well.
FINAL PRESENTATION
1. Pour this cream cheese mixture on the cooled tart shells.
2. Top the cream cheese mixture with sliced kiwi, black grapes, and pomegranates and refrigerate it overnight for best results.
3. Remove from the refrigerator and let it stand for 10 minutes under room temperature before slicing the tarts.
4. Garnish with fresh mint leaves and serve them chilled
