This Broccoli and almond soup is nourishing, healthy and filling. Broccoli is rich in Vitamin C and almonds are rich in Vitamin E so in short this bowl is totally packed with nutrition that tastes absolutely great. The recipe is fairly simple and takes hardly 20 minutes to make. It can be a perfect and a satisfying mid week meal.
Take a non-stick pan and heat butter in it. Add minced onion, garlic and green chili paste and saute for a minute.
Add chopped broccoli pieces in it and saute for another 2 minutes. Now add vegetable stock and salt and let it boil for 10 minutes.
Switch off the gas and add blanched almonds and fresh cream. Blend the above mixture in a blender till you get a smooth and creamy consistency.
Heat the soup for 2 more minutes and pour it in the soup bowl. Garnish with almond flakes, fresh basil leaves and 1 tsp of extra virgin olive oil.
