Kesar Badam Phirni

Kesar Badam Phirni is a sweet delicacy that is made with rice, milk, and Kesar also known as SAffron. It is usually prepared during festivals, marriages, and parties. Phirni is usually popularly liked by everyone and all age groups.

The lure of sweets and desserts is never-ending at my place. Our family has a sweet tooth and we are fond of anything and everything sweet under the sun (it has to taste good though). After all, we live once, and to indulge in our cravings is not as guilty as it may sound. I love to fulfill the food cravings of my family members.

My younger daughter keeps on demanding kheer every now and then. I don’t wait for an occasion to prepare such sweets for her. She actually has a wish list of her sweet dishes. Before going to school she will ask me to prepare a particular sweet for her as after school snack. It could be our humble Rava sheera or kheer.

Now it was time for me to introduce her to the term “Phirni”. Well, she’s allowed to eat very few dry –fruits and nuts. So I decided to make Kesar badam phirni for her. It’s so delicious and an insanely easy one. She relished it and to her heart’s content!! She finally said mom Phirni is very much like kheer and it’s very yummy. My effort to introduce a new sweet was successful and I am sure many of you out there will try this easy peasy recipe and please your loved ones.

Recipe of KESAR BADAM PHIRNI

Ingredients
 
 

  • 1 ltr Full fat milk
  • 2 ½ tbsp Rice
  • 10-12 strands of Saffron
  • ¾ cup Sugar
  • 1 tsp Rosewater
  • ½ cup Roasted almonds shavings

Instructions
 

  • Wash and soak rice for an hour.
  • Drain the water and blend the rice in a blender to make a coarse powder.
  • Add very little water if required.
  • In a heavy bottom pan, heat the milk and let it boil for 5 minutes.
  • Now add rice and saffron to the milk.
  • Simmer the heat and cook till the milk is reduced to 1/2 and phirni has reached the desired consistency.
  • Add the sugar and rose water and boil for another 2 minutes till sugar has been dissolved.
  • Switch off the flame and let the phirni cool at room temperature.
  • Now pour them in earthen bowls.
  • Garnish with saffron strands and roasted almonds shavings.
  • Chill in the fridge for a few hours before serving.
  • Phirni is best tasted when serving chilled and in earthen bowls.
