Step-by-Step Recipe of this healthy vegetarian Hummus Bowl
Ingredients:
1/2 cup Basmati Rice
2 tsp minced garlic
1 tsp cumin seeds / Jera
1 tbsp Cooking Oil
2 tbsp White Chickpea Hummus
2 tbsp Spinach Hummus
1 tsp Black sesame seeds
1/2 cup diced cucumber
1/2 cup diced carrots
few tomatoes slit lengthwise
1/2 cup boiled, peeled and diced beetroot
1 tbsp Extra Virgin Olive Oil to drizzle
A handful of finely chopped coriander leaves for garnish
Method:
Kindly note for this recipe I have used leftover rice and refrigerated White chickpea and Spinach hummus, both these recipes are already there on my website, I will be posting the links of these recipes in notes to refer.
1. Firstly, start your preparation by cooking jeera rice. Meanwhile, you can dice the vegetables and keep them aside for Hummus Bowl. Heat cooking oil in a pan and add jeera/ Cumin seeds, once they crackle add minced garlic in it.
2. Once, garlic starts turning brown, add finely chopped coriander leaves to it. Give it a quick stir.
3. Now add leftover rice and mix it gently so that the rice grains do not break and keep the cooked jeera rice in a bowl and let it cool down for a bit.
4. Now, let us start by preparing our hummus bowl. Spoon the white chickpea hummus in the center followed by spinach hummus as shown in the picture.
5. Finally, arrange the cucumber, carrot, beetroot, and tomatoes around the bowl. Sprinkle black sesame seeds, finely chopped coriander leaves and drizzle olive oil just before serving this hummus bowl.
Notes:
- If you do not have leftover Rice, you can easily make them. For this, you need to soak Basmati rice for 10 minutes and then cook it in boiling water with salt for almost 7-8 minutes till the rice grain is cooked nicely. Drain the rice and let it cool down a bit before you use it in this recipe.
- You can add vegetables of your choice like sweet corn, potatoes, zucchini, broccoli, etc, and make this bowl even healthier.
- However, if you don’t have Spinach Hummus, you can also make this recipe with White Chickpea Hummus or can try different variants of hummus from my blogs like Smoky Tomato Hummus or Roasted Pumpkin Hummus and also Beetroot Hummus will add vibrancy to your vegetarian Mediterranean hummus bowl.
