The sight…smell and sound of Alphonso mangoes are very familiar and nostalgic that it keeps all the childhood memories alive. It’s one of the gorgeous fruit and oh so versatile. Experimenting with different dessert combinations using mangoes excites me. This dessert I had made last year as part of my routine experiments. It was so yum and delicious that hubby dear and my younger daughter finished it off in no time. I hardly got time to style and click pics leave alone tasting. Somehow managed it to do.
The past few days have been very hectic. I have worked like crazy and toiled a lot. My week was quite an interesting one..tiring though!! I had conducted kids cooking workshops for 4 days and ooh man!! it was so much fun!! The realization that today’s kids have already decided to be future Master Chef’s have given me a new high. I am in a way happy and lucky to teach them and somewhere the fact that I am doing my little bit to help them fulfill their dreams is even more enticing. Cooking is my passion though teaching is not. But still, when I get a chance to teach these little chefs I happily accept it and try my best to pass on the knowledge to them.
Well, life is all about exploring and trying out and learning new things. You continue what you love to do and leave the other things that do not interest you. But there is no harm in trying it out!! The same rules apply to cook it too. Try new and innovative recipes ..relish the ones that turn out to be good…simple!!
Recipe of Mango Mousse With White Chocolate Ganache
Recipe of Mango Mousse-
Ingredients:
2 cups fresh mango puree
½ cup milk
½ tbsp. gelatin
1 cup whipped cream
½ tsp vanilla essence (optional)
Method:
1. Mix the mango puree and milk and keep it aside.
2. Stir in vanilla essence at this point (if you are using).
3. Add 1 tbsp. water to set gelatin and heat it in a microwave or double bowl.
4. Strain and add the dissolved gelatin in it.
5. Add the whipped cream and blend it with a beater until it gets a smooth consistency.
6. Pour it in a glass and set in a refrigerator for at least 2 hours.
Recipe of White chocolate Ganache-
Ingredients:
200ml fresh cream
420g white chocolate, finely chopped
Method:
1. Place the chopped white chocolate into a medium-size microwave-safe mixing bowl. Set aside while you heat the cream.
2. Heat the cream in a small saucepan until just boiling.
3. Pour the cream over the chocolate and leave to stand for two minutes. This will give the chocolate time to soften.
4. Stir the ganache until smooth. If all the white chocolate has not melted then place the bowl in the microwave and heat for 30 seconds.
5. Remove and stir until smooth.
How to assemble
1. Start by taking any nice and sexy looking dessert glasses and fill the first layer with Mango mousse.
2. Top it up with creamy white chocolate ganache and then top it with dark chocolate shavings and finally with a dollop of fresh whipped cream.
