Ingredients
- 2 pink pitayas | 2 pink dragon fruits
- 1 cup all-purpose flour
- 1 cup cold milk
- ¾ cup powdered sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla essence
- 2 tbsp Butter

- How to make a puree of pink pitaya?
- Firstly, scoop out the pink pitaya with a spoon and keep it aside.
- Now blend the scooped out pieces in a blender till it is pureed.
- Strain the puree through a strainer and discard all the seeds and collect puree in a bowl.
- Now make the pancake batter by adding flour into the puree,
- Now add sugar, cold milk, baking powder, baking soda, salt, and vanilla essence into the batter.
- Whisk all the ingredients well till the batter is smooth and lump-free. See to it that are no lumps else the pancakes will not be fluffy.
- Rest the pancake batter for 10 minutes before preparing them.
- Heat a non-stick pan and brush it with butter. Now add 1 spoon of batter and spread it on the pan.
