Chickpea flour halwa or Besan halwa is a delicious Indian sweet that has earthy and rustic flavors. It is usually prepared during festivals and poojas. If you want to make this Chickpea pudding or Besan halwa as a Vegan option then totally avoid milk in the recipe or can substitute with coconut milk. It will taste equally good.
Recipe of Chickpea flour pudding, Besan Halwa
Ingredients:
1 cup Chickpea flour/Besan
1/2 cup Sugar
1/2 cup Ghee
1 tsp Cardamom powder
a handful of Thinly sliced Almonds
1/2 cup Milk
1 cup Water
Method:
1. Heat a non-stick pan and add ghee in it.
2. Once the ghee is hot add chickpea flour/ besan flour in it.
3. Fry besan in ghee on a slow to medium flame and keep stirring in between.
4. Continue to fry till besan changes its color and leaves its aroma.
5. Now add 1/2 cup milk and 1 cup water in besan and keep stirring continuously so that no lumps are formed.
6. When the besan absorbs all the milk and water, add sugar and cardamom powder in it.
7. Keep stirring continuously so that the mixture doesn’t stick to the pan.
8. Switch off the flame when the above mixture is cooked and lump-free.
9. For checking is your halwa is cooked put a laddle in the middle of the mixture.
10. If the laddle sits firmly in it, your halwa is cooked.
11. Garnish with sliced almonds and serve it hot.
12. You can also use other dry fruits like pistachios and cashew nuts.

Ingredients
- 1 cup Chickpea flour/Besan
