1 packet Panini sandwich breads
1 cup Chopped Cucumber
1 Big Ripe Mashed Avocado
1 cup Blanched Spinach
1/2 cup Eggless Mayonnaise
2 cups Fresh peas minty dip
2 tsp Minced garlic
2 tsp Oregano and chili flakes
2 tbsp Butter
Salt as per taste

    The key to any Vegan sandwich is using the maximum greens and vegetables in it.  Mashed up avocados, pea minty dip and a dash of eggless mayonnaise are all things that get squishy when heated.  All the flavors get incorporated well and kind of melt in your mouth when put together. Toast it with butter on both the sides till it is lightly brown or serve it cold. It is a perfect recipe for picnics or lunchbox. When having cold version you can prepare it on the previous night and store it in the box in the refrigerator.

    For the vegetarian version add grated processed cheese in the sandwich to make it extra cheesy. For more fresh flavor I have added  Fresh Pea Minty Dip, you can also add home made Basil pesto,it will work just fine. The idea it to incorporate as many greens as possible.     Slice the panini bread and apply butter and keep it aside.
    In a bowl combine together cucumber, mashed avocado, spinach, mayonnaise, and garlic. Add oregano, chili flakes, and salt and mix well.


    Heat a pan and while it's getting heated prepare for the sandwiches.
    Fill the sliced buttered panini pieces of bread with the above filling and fresh pea minty dip.


    Apply butter on both the sides and toast the sandwich till it is lightly brown.
    Your health and yummy green panini sandwiches are ready to serve.
    Serve it hot with tomato ketchup or salsa.
