Now let’s come back to this Vegan Green Goddess Panini sandwiches, they are delicious, comforting and great to put together. They are creamy, crunchy-munchy, versatile, nourishing and oh so green!! This recipe is surely worth bookmarking it as I am sure you will make this very soon.
The key to any Vegan sandwich is using the maximum greens and vegetables in it. Mashed up avocados, pea minty dip and a dash of eggless mayonnaise are all things that get squishy when heated. All the flavors get incorporated well and kind of melt in your mouth when put together. Toast it with butter on both the sides till it is lightly brown or serve it cold. It is a perfect recipe for picnics or lunchbox. When having cold version you can prepare it on the previous night and store it in the box in the refrigerator.
For the vegetarian version add grated processed cheese in the sandwich to make it extra cheesy. For more fresh flavor I have added Fresh Pea Minty Dip, you can also add home made Basil pesto,it will work just fine. The idea it to incorporate as many greens as possible.
