Ingredients

8 slices Brown bread
2 cups Grated carrots
2 cups Grated pink radish
1 small Red bell pepper
1 tbsp butter at room temperature
1 small bunch lettuce leaves
1 tbsp eggless mayonnaise
1 tsp chaat masala
1 tsp Italian seasoning
Salt and pepper to taste

    Directions

    Serve this simple, healthy and Italian sandwich for a light dinner. They are loaded with veggies and packed with energy. Relish it with tomato ketchup, chutney, chips or jazz it up with a slice of cheese.

    Method

    Take a bowl and add the grated carrots, mayonnaise, Italian seasoning, pepper powder and salt.
    Mix well and Keep it aside.
    Take another bowl and mix the grated radish, chaat masala and keep it aside.
    Take another bowl and add the hand torn lettuce and red bell pepper slices. Mix salt and pepper powder and keep it aside.

    How to assemble

    Apply butter on one of the sides of all the slices.
    Now spoon the carrot and mayo mixture on one slice.
    Fill the second slice with lettuce leaves and slices of red bell pepper.
    Finally spoon the radish mixture on the third slice and cover your clubhouse sandwich with the fourth slice of bread.
