Vegan Coriander Coconut Chutney – Navratri Vrat | Fasting recipe

This Vegan Farali / Phalahari Coriander Coconut chutney is a great condiment for Navratri Vrat / Fasting food.  This chutney is versatile and bursting with fresh flavors and aroma. It is a must-have chutney in all the  Indian houses during Navratri. It pairs very well with all the snacks and Fasting food that we prepare during Navratri. It is made up of fresh coriander, coconut, peanuts, and green chili that is ground with other spices and served as a dipping sauce.

This Farali coriander coconut chutney goes very well with all the snacks that are made during fasting.

Recipe of Vegan Coriander Coconut Chutney

Ingredients:
1 Medium Bunch Fresh coriander leaves
1 cup Freshly grated Coconut
1-2 green chili
1 inch Fresh Ginger
1 tbsp Peanuts
2 tsp Lemon juice
Salt as per taste

Method:

1. Add peanuts, green chilies, and coconut to a grinder and grind it coarsely.

2. Once all the above ingredients are coarsely grounded add finely chopped coriander leaves, salt, and lemon juice.

3. Now grind it again for a minute till all the ingredients are well-grounded and blended properly.

4. Taste the chutney and adjust the salt as per your taste buds.

5. If the chutney is a tad salty you can add a pinch of sugar to it.

NOTES:
1. Always grind the peanuts, green chili, ginger, and coconut in the first round as they will take little more time to grind.

2. Later in the second round add coriander leaves, salt, and lemon juice and grind it again for a minute.

3. This will help to retain the flavor and color of the fresh coriander leaves and your chutney will be bright green and flavorful.

4 Always store your chutney in a glass or ceramic bowls as it will retain its color.

5. Store it in the refrigerator for 2-3 days. If you want you can also store it in small containers in the deep freezer for 10-15 days and use it as and when needed.
