Beetroot Parathas | Beets with Indian Bread with step-by-step pictures and recipes. These healthy, vibrant, and nutritious beetroot parathas make a great breakfast or a lunch option. I make beetroot vegetable parathas very often in my house as it is the best way to include the benefits of beetroot in my daughter’s diet. My fussy eaters do not like a lot of vegetables, so I usually prepare different parathas where I sneak in the veggies they dislike otherwise.

This Beetroot parathas are a big hit with my kids mainly because of the bright pink color it has. It makes it visually appealing and at the same time, they get all the nutrition from the veggie.

How to Cook Beets

  • Cut the beets into half and boil them in a pressure cooker for 3-4 whistles.
  • Once the pressure cooker cools down, gently open the lid, take the beets and peel their skin.
  • They are ready to use. You may want to grate them or make a beetroot puree.

Ingredients
 
 

  • 1 cup wheat flour
  • 2 tbsp grated beetroot
  • 1 tsp ghee
  • 1 tsp cumin powder/ jeera powder
  • a handful of freshly chopped coriander leaves
  • salt as per taste
  • 2 tbsp cooking oil for parathas

Instructions
 

  • Firstly, keep all the ingredients ready on a plate for kneading the dough.
  • Now mix water in the dough and knead the dough till it is soft and keep it aside for 10 minutes.
  • Make 6 balls out of the dough and keep it ready.
  • Roll the parathas into a circle, fold it into a triangle and apply little ghee and sprinkle some flour on it.
  • Again make a small triangle out of it as shown in the picture.
  • Roll it into a triangle and cook it on a Tawa.
  • Apply 1 tsp of oil on both the sides and make parathas till they are cooked properly.
  • Repeat the same procedure for all the parathas and stack them on one another and serve it hot.
