What is SYRNIKI?
They are Russian Cottage Cheese Pancakes that are generally served in Breakfast along with sour cream and berries. These pancakes are very popular in Eastern Europe as it tastes so delectable and makes a perfect breakfast option. They are a low-fat delicacy, protein-rich and they taste incredibly delicious. Basically, they are pancakes that are very soft from the inside and crispy and crunchy from the outside.
How easy is it to make SYRNIKI?
They can be made with minimum effort and don’t require any elaborate preparations. The best part about Syrniki is that it is made with cottage cheese that lends that pillowy softness to these Russian pancakes. This recipe is a little different from the regular pancakes as this will form like a dough and not batter.
Pancakes make the best option for breakfast and everybody likes it. Syrniki’s, a little different version of pancakes are now our family’s favorite as my husband and my both daughters relished them and they were polished off in no time.

Recipe of Syrinki | Syrniki recept:
INGREDIENTS REQUIRED TO PREPARE SYRNIKI
This recipe will yield 12 Fluffy Syrinkis
1 1/2 Cup- Cottage cheese (Home-made paneer)
1 Cup- All-purpose flour (Maida)
1 tbsp- Cornflour (You can use Egg as a substitute)
1 cup- Powdered Sugar
1 tsp-Vanilla extract
1 tsp- Baking Powder
1 tsp- Baking soda
A handful of Dry Cranberries
2 tbsp Butter
HOW TO MAKE RUSSIAN SYRNIKI – STEP BY STEP RECIPE
1. Firstly, In a large bowl, crumble cottage cheese, and mash it lightly with the help of a fork.
2. Secondly, Add Cornflour, vanilla essence, powdered sugar, and mix well.
3. Now add in all-purpose flour, (leaving little flour aside for rolling) and dry cranberries, then mix well again.

4. At this point, knead the mixture like a dough, you do not require to add any milk, the moisture content in the cottage cheese will help to bind the dough.
5. Now, In a shallow bowl keep the remaining flour to roll the pancakes.
6. Then take a lemon size ball of dough, flatten the side of the ball to get a cube-shaped pancake.
7. Now with the help of a butter knife sharpen the edges of the pancakes and rub them into flour on all the sides and shake off extra flour. Repeat the same process with the remaining dough.
8. After sharpening the edges, Heat a nonstick pan and add 1 tbsp of butter, and gently put Syrniki into the pan.
9. Cook for about 2 minutes on each side, till all the sides are golden brown and cooked properly. At this point, you can gently prick a toothpick to check if it’s cooked well from inside.
10. Now transfer all the Syrinkis into a bowl. You might need to cook pancakes in 2 batches if you cook 6-7 together at a time.
11. Now dust it with powdered sugar and serve it hot, as it will not taste that good once it cools down.
Serving Suggestions
Once you try this recipe, I am sure you will make Syrniki very often. These taste so good. Traditionally Russians serve it with a dollop of sour cream, Berry sauce or Berry compote, maple syrup, honey and sprinkle some powdered sugar on top of it.
Variations and options for making Syrniki:
Traditionally these Russian Pancakes are made using eggs, but since my daughter is allergic to eggs I have used Corn flour as a substitute and it worked well. But if you eat eggs I will recommend you use it in this recipe. Also, you can add any other dry berries like raisins or black raisins in the dough as per your liking. You can totally avoid it too if you do not want it in the dough.
