This recipe I have learned from my mother in law. She makes the best Upma and I am sure many would agree to it. However, after learning this recipe from her and trying it many times, I have finally nailed this recipe.

So, basically, Upma is a traditional South Indian Breakfast made from Rava also popularly known as Semolina in English and Sooji in Hindi. Upma is a typical breakfast option as it is healthy and also cooks fast. It can be cooked with basic ingredients available in our pantry. No elaborate cooking is required nor any fancy items needed. So it becomes very easy to cook and serve as a hot breakfast option.
Upma, also a popular breakfast dish in most Indian homes as it is easy to prepare, tastes delicious. It is always served with Ginger Tea or Filter Coffee as it pairs well. Since it is a little dry it is always better to serve a beverage along with it. If you do not consume tea or coffee, you can also try smoothies like Strawberry and Black Grape Smoothie, Green Dream Smoothie, Pina Colada Smoothie, or Beetroot Smoothie.
If you are looking for some variations, you can also try this tasty Bread Upma for breakfast. You can also make Vegetable Upma by adding various vegetables like peas, carrot, capsicum, and tomatoes. Upma Recipe
Ingredients
- 1 cup Rava Semolina or Sooji
- 1 tbsp Ghee
- 2 ½ cups water
- 1 tbsp curd / Yogurt
- 1 tsp sugar
- 2-3 green chilies finely chopped
- 7-8 curry leaves
- 1 tsp mustard seeds
- 1 tsp chana dal
- 5-6 cashew nuts
- 1 big onion finely chopped
- Salt as per taste
- 1 tbsp cooking oil
- ¼ th cup of finely chopped coriander leaves
Instructions
- How to Roast Rava / Semolina
- Heat ghee in a nonstick pan and add Rava/Semolina to it.
- Roast the Rava on a medium flame stirring frequently for about 5 minutes till it turns brown.
- Once the Rava leaves a nice aroma and turns the brown switch off the flame and remove it on a plate and keep it aside.
- How to make Upma
- Heat oil in a pan and add mustard seeds to it.
- Once they crackle, add chana dal to it.
- Wait for 30 seconds to allow chana dal to turn brown.
- Now add cashew nuts, green chilies to it and cook till they turn brown.
- Add, finely chopped onions to it and saute them for 2 minutes till onions turn translucent.
- Now add water to the pan and let it boil for a minute.
- Once the water comes to a boil, add curd to it.
- At this point, add sugar, salt and mix everything well.
- Once the whole mixture come to a boil, add Rava to it.
- Mix everything well and cook till all the water evaporates and Rava is cooked properly.
- Finally, put the ladle in the center to check if the Upma is cooked properly.
- Remove the Upma to a plate, garnish with finel

Recipe Notes:
- Roasting Rava is a very important step, so please do not omit it.
- Please roast Rava on a medium flame and stirring continuously, else it may burn and turn black.
- You can skip sugar in this recipe.
- Adding cashew nuts gives a nice crunch and flavor to this Upma Recipe.
- Also, adding curd to this recipe enhances the taste of Upma, if you do want to use it use lemon juice.
- You can add Rava first and water later, both work well.
- Serve Upma hot along with a cup of coffee and Chai / Tea.
