It hardly takes 10 minutes to cook this recipe from leftover idlis of the previous day. This is a very versatile recipe and you can use as many vegetables you want to.
In this recipe, I have used onions and carrots, but some of the options that can be used are capsicum, tomatoes, cauliflower, etc. The choice is totally yours and you can get very creative with this.

How to make Masala Idli from leftover Idlis
Recipe of Masala Idli:
Ingredients:
10-12 Steamed Idlis
2 tbsp Oil
1 big Onion
1 big Carrot
2 tsp Coriander Powder
1 tsp Mustard seeds
1 tsp Turmeric powder
2 tsp Red Chili powder
A Handful of Finely chopped coriander
1 tsp Lemon juice
Salt as per taste
Method:
- I am using leftover idlis for this recipe as it will taste best with it.
- Make small chunks of idlis and keep it aside.
- Peel Carrot and Onion and chop them finely into small chunks.
- Heat oil in a pan and once its hot add mustard seeds in it.
- Once mustard seeds start to crackle add finely chopped onion and carrot to it.
- Saute it for 4-5 minutes until onion and carrot are cooked properly and tender.
- Now add turmeric powder, coriander powder, and red chili powder in it.
- Give it a nice stir and sprinkle salt as per the taste.
- Finally, add idli chunks to it and mix it well so that all the spices and veggies coat properly.
- Cook it for 2-3 minutes stirring in between so that the idlis don’t stick at the bottom of the pan.
- Switch off the flame and add lemon juice and garnish with finely chopped coriander leaves and serve it hot.
