Baked Potatoes with Spinach and Cheese
Ingredients
- 8 semi boiled potatoes
- 1 onion finely chopped
- 1 cup spinach finely chopped
- 4-5 minced garlic
- 1 tbsp butter
- 1 tsp pepper powder
- salt to taste
- 1 cup grated mozzarella cheese
- a handful of finely chopped coriander leaves
Instructions
- Firstly, parboil the potatoes in a pressure pan by giving just 1 or 2 whistles. Once the pressure releases open the lid and remove the potatoes aside and let them cool.
- Then cut each potato into halves vertically with a sharp knife.
- Scoop out the center of the potato with a spoon so that a depression is created to stuff the filling. Keep this mashed
- Repeat the same procedure with all the potatoes and keep it aside.
- Meanwhile pre-heat the oven at 180 C for 20 minutes.
- For the stuffing, heat butter in a pan, and when it's hot add minced garlic, cook for few seconds, and now add chopped onions.
- Saute it on a high flame for 2 minutes till it turns brown. Add chopped spinach, salt, and pepper.
- Cook for 2-3 minutes till spinach wilts and finally add the scooped out potatoes in it and combine everything well together.
- Now take each scooped out potato, and fill it with 1 tbsp of spinach filling and sprinkle with grated cheese.
- Bake in a pre-heat oven for 10-12 minutes till the cheese melts.

Recipe Notes
- If you are planning to make this recipe in advance, then select either small one bite-size potatoes or medium size. Avoid taking too big potatoes.
- After scooping out the center, you can also deep dry the potatoes or pan fry it in butter, till it turns golden brown. However, this is an optional step.
