Recipe Notes:

  • Preferably use large Russet Potatoes for this recipe. Large size will give the exact shape of wedges. However, if not available you can use any other potatoes as well.
  • You can try this recipe using sweet potatoes as well. Follow the same recipe and substitute Russet Potato with sweet ones.
  • Cleaning and washing the potatoes is recommended as it will remove all the mud.
  • We make wedges with potato skin so do not peel the potatoes.
  • However, if you do not have fresh parsley, use fresh coriander leaves.
  • Butter can also be used instead of olive oil.
  • Stop baking at 40-45 minutes if you do no want wedges to be very crispy. However, we like our bit more crispy so baked it for 55 minutes.
  • Turning sides of the wedges halfway are very important for even baking, so do not skip that step.
