Rajgira Kadhi | Amaranth flour Kadhi
Ingredients
- 1 cup full-fat yogurt | curd
- 3 tbsp Amaranth flour | Rajgira flour
- 5-6 curry leaves
- 1 tsp cumin seeds | jeera
- 1 tsp ghee
- 2 green chilies slit into half
- 1 tsp sugar
- 1-2 tsp sendha namak | rock salt
- a handful of finely chopped coriander leaves
Instructions
- Firstly, take yogurt in a bowl and whisk it till there are no lumps.
- Now add 3 tbsp of Amaranth Flour | Rajgira Flour to the yogurt and whisk it again.
- Add 2 cups of water to the bowl and whisk it well till there are no lumps and boil it on a low flame stirring in between.
- Now add rock salt and sugar to the kadhi mixture and mix it well. Boil it for 5 minutes till the rajgira kadhi thickens. Stir it occasionally.
- For the tadka take ghee in a small pan, add cumin seeds, curry leaves, and green chilies. Once they crackle switch off the flame.
- Add the tadka in the rajgira kadhi and boil it for another 2 minutes and switch off the flame. Garnish with finely chopped coriander leaves and serve it with Rajgira Poori and Vrat wali aloo ki sabzi.
