Rajgira Parathas are a gluten-free and nutritious Indian bread recipe that is prepared using Amaranth Flour, boiled and mashed potatoes, and kneaded gently with warm water.

Rajgira or also known as Amaranth is a healthy and gluten-free grain that is mainly consumed in India during fasting | Vrat | Upwas. Moreover, it is most popularly eaten during Hindu festivals like Navratri, Ekadashi, and other religious fasts.

How does Amaranth Flour taste like?

This flour is light brown in color and has an earthy and nutty taste. It has a distinct aroma and ist tastes slightly sweet. The recipes made with Amaranth or Rajgira flour are healthy as it is a gluten-free grain and also enhances the taste of the recipe.

Rajgira Parathas tastes very good and it is one of the most common types of parathas eaten during Navratri Vrat. It pairs well with Vrat wale Aloo ki sabzi and Cucumber Raita

Ingredients
  

  • 11/2 cups Rajgira Flour
  • 2 boiled potatoes
  • 1-2 green chilies finely chopped
  • 1 tsp cumin powder/jeera powder
  • 1/2 cup warm water preferably
  • 1 1/2 tsp Rock salt/ Sendha namak
  • 2 tbsp ghee or cooking oil

Instructions
 

  • Firstly, boil potatoes, peel the skin, and mash it till there are no lumps.
  • Take a big round vessel, add Rajgira flour, boiled potatoes, green chilies, and mix well.
  • Now add cumin powder/jeera powder in the flour.
  • Also add rock salt in the dough and mix all the ingredients well.
  • Since we have added boiled potatoes, there is enough moisture in the dough, so add water slowly as required.
  • Knead it into a soft dough and keep it aside for 10 minutes.
  • Divide the dough into equal parts and start rolling it. Take a cling plastic sheet, place it, and gently press the dough ball.
  • Roll it very gently with the help of a rolling pin and without breaking the edges of the flour.
  • Heat griddle and apply a tsp of ghee or oil and gently lift the cling sheet and place the rolled paratha on the griddle.
  • Once you see the buble or light brown color, flip the parathas.
  • Now apply ghee on the parathas and cook it with laddle till they are brown and cooked. Once done carefully place them on another plate and repeat the same procedure for rest of the parathas.

Step-by-Step Recipe of Rajgira Paratha

4. Also add rock salt in the dough and mix all the ingredients well.

5.  Since we have added boiled potatoes, there is enough moisture in the dough, so add water slowly as required.

6. Knead it into a soft dough and keep it aside for 10 minutes.

Tips and Recipe Notes

  • Rajira flour dough is difficult to roll, so it’s advisable to use plastic cling or butter paper for rolling purposes.
  • You can knead the dough with a mixture of yogurt and water.
  • Be patient while rolling this as it will break otherwise.
  • Rajgira paratha pairs well with aloo ki sabzi, raita, farali kadhi and suran ki sabzi as well.
  • Rajgira Parathas will taste best when served hot and fresh.
