What ingredients you’ll need to make this lemon Pasta

  • Pasta of your choice, I have used mini Penne in this recipe, however, you can use fusilli, spaghetti, or linguine as well.
  • Lemons or Lime, whatever is available and preferred by you.
  • Coconut powder or Coconut milk.
  • Olive Oil
  • Small bunch of fresh Spinach leaves, you can use fresh basil or parsley as well.
  • Dry Herbs and Chili Flakes

Lemon-Pasta pasta-al-limone

Step-By-Step Recipe of Lemon Pasta:

Ingredients:
Serves for 2
1 1/2 cup mini penne pasta
2 tsp minced garlic
1 big size lemon
11/2  tbsp Extra virgin Olive Oil
small bunch of fresh spinach
1 tsp dry herbs and chili flakes

Method:
1. Firstly, boil water in a large and broad vessel, add a generous amount of salt and let it boil. Now add the pasta in that boiling water and let it cook for 8-9 minutes till they are Al dente.
2. Once the pasta is cooked drain into a skewer, keeping some of the water aside to use it in the recipe.
3. Keep all the ingredients ready and chop spinach lengthwise.
4. Meanwhile, in a bowl, add water to coconut powder, avoid this step if you are using coconut milk, and whisk it well till it is combined nicely.
5. Finally, start cooking our lemon pasta, heat olive oil, and add minced garlic, once it leaves its flavor add chopped spinach in it. Toss it lightly, add the coconut milk, lemon juice, zest, and coconut milk in it.
6. Now add cooked pasta, salt, pepper, dry herbs, and chili flakes in it and toss everything till well combined.

Tips for making this Lemon Pasta perfect | Pasta al Limone:

  • Firstly, add a generous amount of salt in the boiling water so that the salt is distributed evenly in the pasta.
  • Secondly, Cook pasta till Al dente, meaning until they are firm. Do not overcook pasta as they will become mushy.
  • Finally, add just enough lemon juice and zest, else the pasta will become bitter.

Variations to this recipe:

Most importantly, this recipe of Lemon Pasta is my husband ane my favorite. However, you can try adding basil or parsley instead of spinach. Since this is a vegan recipe I have added coconut milk, you can also use heavy whipping cream.
